High Pressure Processing is a cold 'pasteurisation' system enabling supply of safer more natural foods with extended shelf lives.
The system involves enclosing food in a vessel with clean water and applying intense pressure (up to 87000 psi) which causes sub lethal damage to microorganisms but has minimal effect on the flavour or nutritional attributes of foods and drinks, unlike thermal processes.
